What is the Homework Policy?

Does anyone know what the policy is -- official or otherwise -- for homework and projects assigned over a break? We encountered a major book report project that had to be done over Spring Break and were not at all happy about how it interfered with other plans. The actual assignment was given a week before the break started but could not have been completed in that time; ergo, a significant commitment to homework while on vacation. Any reliable information would be appreciated, for future reference.
